How to try bottarga on Sardinia
The most popular antipasto in Sardinia and the best dressing for pasta is bottarga or dried roe of tuna or mullet. It is often served in restaurants with sandwiches, salads, sprinkled on pasta.

Prepared bottarga by calf compression, after which it is obtained from a solid piece of salty and incredibly delicious caviar. Usually, it is cut into thin slices or grate. The most delicious bottarga is made from mullet roe, it is amber in color and has a delicate flavor, reminiscent of almonds. Bottarga tuna has dark red colour, and the taste is like anchovies.

You can buy bottarga in the supermarket, on the market or order in a restaurant.
