Kulen is a traditional Croatian sausage made from minced pork which is smoked and abundantly flavored with paprika.
How to try kulen in Dubrovnik
Kulen is a very popular Croatian sausage made from minced pork. To produce kulen they mix minced pork with hot red pepper, spices and garlic. Then it is smoked and dried for several months. It turns out to be veeery spicy and hot :)

During smoking, some varieties of kulen cover with a thin layer of mold and become even more expensive.
