Imagine your surprise when at the request to advise you some refreshing light dessert in Thailand you are offered a bowl ... with rubies! Of course, these are not real rubies — shiny red bits of something unknown but reminding this beautiful stone, and in addition — much like pomegranate seeds.

The secret of this culinary invention is in that it is made from juicy and crunchy water chestnuts, cut into slices, and stained with a special mixture of ruby colour. «Rubies» are poured with sweet syrup with the elusive scent of jasmine and coconut milk, and it may have the jackfruit added and always — crushed ice.

The dessert can serve as a viable alternative to the usual ice cream — a pleasant taste and charm; it is also great refreshment in the hot days.
